For over 120 years, Xita in Shenyang has been a traditional gathering place for the Korean ethnic group. With the influx of the South Koreans, a diverse culinary culture emerged there, blending the authentic flavors of both the Korean ethnic group and South Korea. Among others, the South Korean introduced their classic Korean charcoal clay stove barbecue to China. Due to a shortage of grills in the country, the Korean ethnic group ingeniously crafted a kind of stove made of local yellow clay. To cater to the locals’ fondness for hotpot, they developed a rich sesame-based dipping sauce. The iconic Korean-style clay stove barbecue has been developing on this basis.
